Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs, separated white & yolk
- 1/2 teaspoon vanilla essence
- 1 1/3 cups flaked coconut
- Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
- In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the white egg until light , fluffy and stif. Gradually blend in egg yolk, vanilla and the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto small cookies cup.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.
