Chocolate And Avocado Smoothie



A creamy, thick avocado chocolate smoothie that is like drinking a milkshake, but is secretly packed with healthy nutrients.

Ingredients

1 small avocado, peeled, and cut into chunks
1 banana, peeled and cut into chunks
1-2 tbsp cocoa powder or chocolate
1 tub fat-free natural yogurt
2 tsp honey (optional)
100 ml chilled water


Directions

Blend yogurt, banana, water, and avocado until smooth.
Add remaining ingredients blending until smooth.

Pulut Mangga Bersantan.



Pulut Mangga yang paling mudah dan ringkas. Pulut mangga adalah salah satu dessert orang Thailand yang popular. Mangga ranum dimakan dengan pulut dan santan sungguh menyelerakan.

Bahan-bahannya

1 biji mangga ranum
2 cawan beras pulut
2 cawan santan
1 sudu besar minyak masak (tak letak pun boleh)
1 helai daun pandan
sedikit garam

Sos santan
1 cawan santan pekat
2 sudu besar gula
1 sudu tepung jagung
1 sudu besar tepung beras ( tepung dicampur sedikit dengan air)
sedikit garam

Cara-caranya

Didalam rice cooker, masukkan beras pulut yang telah dibasuh, kemudian masukkan 2 cawan santan , 1 sudu minyak masak dan sedikit garam,ikat sehelai daun pandan ,tekan ON n biarkan sehingga masak.atau pun boleh mengukus beras pulut bersama 2 cawan santan dan garam selama 20-25 minit sehingga pulut lembut dan masak.

Kemudian buat sos santan pula, masukkan santan, bacuhan tepung beras, tepung jagung, garam dan gula, kacau sehingga santan pekat, angkat dan sejukkan.
kupas kulit mangga dan hiris kan mangga bentuk memanjang atau dadu mengikut selera masing2.

Cara penyediaan, masukkan pulut yang telah dimasak di dalam acuan atau pun boleh juga disenduk sahaja atas piring hidang, kemudian atur mangga di tepinya, akhir sekali curah sos santan, nikmati pulut mangga ini sebagai pencuci mulut. Selamat Mencuba

Cinnamon Waffles With Apple Topping.


Ingredients

For the Cinnamon Waffles
1 cup whole wheat flour
3/4 t. cinnamon
1/2 t. salt
2 t. sugar
1/4 t. baking soda
1 cup milk
1 egg, separated
1 T. olive oil
1 t. vanilla extract

For the Apple Topping
1 apple, diced
1/2 t. cinnamon
2 t. brown sugar
1/2 T. butter

Instructions

To Make the Cinnamon Waffles

Preheat your waffle maker.
In a large bowl whisk together the flour, cinnamon, salt, sugar, and baking soda.
In two small bowls separate the egg yolk and white.
In the bowl with the egg yolk add the milk, oil, and vanilla and whisk together.
Pour the wet ingredients into the dry and stir together.
Whisk the egg white until stiff peaks form and then fold it into the waffle batter.
Depending on the size of your waffle maker add 3/4-1 cup of the batter.
Bake the waffles until they are golden brown.

To Make the Apple Topping
Melt the butter in a medium sized skillet over medium high heat.
Add the diced apple, brown sugar, and cinnamon and stir together.
Cook the apple mixture for about 3 minutes or until the apple has softened slightly and caramelized.
Serve the waffles topped with apple topping and maple syrup if desired.

Sausage And Crab Meat Omellete


Ingredients

4 eggs
1 tablespoon butter
¼ red bell pepper, diced small
1 green onion, sliced fine
1 tomato. diced small
½ package sausage, diced small
5 slices crab meat stick, diced small
½ cup cheddar cheese, shredded
Pinch of salt and pepper

Preparation
Cook sausage and crab meat in a non-stick omelette pan over medium heat, then remove. Add the onions, tomato, bell pepper, cook them a little bit using the sausage grease, then remove.
Whisk the eggs in a bowl, add salt and pepper, add the butter to the same pan after wiping it clean with a paper towel. After the butter has melted, make sure it covers the entire bottom of the pan, then add your eggs.
Now for the flip: make sure that the eggs have not stuck by giving them a little jiggle; if part of the eggs is not moving, you'll know they have stuck.
After the omelette has been flipped over, add your grated cheese, the sausage, crab meat and vegetables.
Now for the slide: again, making sure the eggs have not stuck, slide the omelette halfway out of the pan onto the plate and tilt the rest of the omelette, flopping happily onto itself. Ready to serve.

Avocado And Cream Cheese Toast



Here’s what you’ll need:

Whole wheat bread
Cream cheese
Avocado slices
Olive oil
Pepper flakes

Directions: Spread olive oil on one slice of whole wheat bread and place in the toaster. While your toast cools, slice your avocado in slices. Spread cream cheese on top of toast and lay avocado slices. For a kick of spice sprinkle red pepper flakes on top of toast and you’re all done!

LALA PEDAS

Bahan-bahan :

1/2 kilo lala (dibersihkan)
1 sudu besar cili giling
5 biji cili api (diketuk)
3 ulas bawang putih (diketuk)
1 cm halia (diketuk)
1 batang serai (diketuk)
1 sudu besar sos tiram
2 sudu besar sos cili
3 helai daun limau purut
sedikit sos tomato
sedikit sos cili
sedikit kicap manis
sedikit daun bawang / daun sup(dihiris)
sedikit garam
minyak untuk menumis

Cara-cara :

Tumis bawang putih, halia dan cili giling hingga terbit bau.
Masukkan sos cili, sos tiram, sos tomato, kicap manis, cili api dan daun limau purut. Kacau sebati.
Masukkan lala dan sedikit air.
Akhir sekali masukkan daun bawang dan perasakan dengan garam.
Hidangkan setelah masak.

LALA TOMYAM


Bahan-bahan

Sekilo lala (basuh dan toskan)
5 biji bawang merah
2 ulas bawang putih
5 biji cili api
sedikit halia
1 sudu besar cili giling
sekeping asam gelugur
2 batang serai
1 biji tomato (dipotong 4)
3 helai daun limau purut
Gula/perasa dan garam
daun ketumbar dan daun bawang (hiasan)

Cara-cara
1.Bawang merah, putih dan halia diblender dan ditumis dalam minyak yang panas dan biar seketika.
2. Masukkan cili giling dan biar naik bau kemudian masukkan daun limau purut dan serai dan asam keping tadi.Kacau seketika dan seterusnya masukkan air , tomato dan juga lala yang telah ditoskan. Masukan bahan perasa dan sedikit garam.Biar mendidih dan kulit lala terbuka(jangan dikacau sangat..isinya mudah terkeluar)

Bruschetta With Tomato And Basil.


Ingredients

Baguette
Tomatoes (diced)
Basil
Sugar
Extra virgin oil
Salt & pepper to taste

Combine tomato, basil, vinegar, sugar and 1 tablespoon extra virgin olive oil in a bowl. Season with salt and pepper. Grill baguette for 1 to 2 minutes each side or until golden. Transfer to plates.Spoon tomato mixture onto toast. Serve.

ROTI JALA



Bahan bahan:

3 cawan tepung gandum
2 1/2 sudu besar minyak masak
1 sudu kecil garam
1 biji telur
3 cawan air/santan/susu segar ( air dicampur sedikit santan)
Sedikit pewarna kuning atau kunyit dan pewarna biru

Cara-cara:
Blendkan semua bahan di atas hingga sebati dan tapis. Kalau nak tahu adunan dah boleh dijala atau belum, cuba masukkan sesenduk ke dalam acuan. Kalau keluarnya tak putus-putus maknanya dah boleh di jala menggunakan kuali non stick. Kuali biasa pun boleh asal tak melekat. Kalau pekat tambah air lagi sehingga boleh dijala.
Lepas jala atas kuali biarkan dalam beberapa saat. Kalau dah masak tak payah dibalik terus di angkat dan digulung. Bila dah siap bolehlah dimakan dengan kuah kari daging atau kari ayam..Selamat mencuba.

No Milk Bread Pudding


Ingredients :

1 Cup Icing sugar
½ Cup Water
5 Tablespoons Brown Sugar
2 Tablespoons Butter
3 Eggs
2 Teaspoons Vanilla Extract
1 Teaspoon Cinnamon
1 Loaf Bread (cubed)

Directions :

Preheat oven to 350 degrees Farenheit.
Put icing in a microwave safe container and heat for 30 seconds on high, to melt it.
Remove from microwave and stir in water to thin it out.
Pour that into a large bowl and add the butter, brown sugar, eggs, vanilla and cinnamon. Whisk to combine everything.
Add the cubed bread to the mixture and toss to get everything well coated. Let sit for 10 mins.
Use butter to grease a 9"x13" pan or individual muffin tins.
Pour, or spoon, bread mixture into the pan.
Bake for 40-50 minutes or until the pudding is set and the top is golden brown.
Let cool slightly before serving.

POUND CAKE



Top my pound cake with ice cream and fruit cocktails for a tasty combination.

Ingredients:

250g butter, softened
3 cups sugar
6 large eggs
4 cups all purpose flour
3/4 cup milk
1 teaspoon almond extract
1 teaspoon vanila extract

Directions:

Beat butter at medium speed with an electrik mixer until creamy. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs one at a time. Beating just until yellow yolk disappears. Add almond and vanila extract. Add flour alternate with milk, beginning and ending with flour. Beat at low speed just until blended after each addition.
Pour into a greased and floured pan. Used butter to grease the pan. Sprinkle a light coating of flour over the greased surface.
Bake at 150C for 1 hour or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire race for 15 minutes. Remove from pan and cool completely on a wire rack. Top your pound cake with ice cream and fruit cocktails for a tasty combination if desired.

Homemade Blueberry Cheese Tart.




Ingredient:

For cheese filling
500g cream cheese
100g castor sugar
125g butter
1/2 Grade A egg

For the tart crust

375g flour
75g icing sugar
188g margerine
1/2 Grade A egg

To assemble and glaze
1 can Blueberry jam / paste
Piping bag

Method:

Mix the cream cheese, sugar, butter and half an egg into a mixing bowl and beat with an electrical hand mixer. Beat until the sugar melted and the texture become smooth and creamy. Leave it aside.
Pour in the icing sugar, margerin and half an egg into another mixing bowl and mix well. Now you can add in the flour by batches and start to knead the dough until it become a playable dough. Take some dough in your hand and start to press it into the tart mould. When all the tart is ready, place it in the preheated oven of 150 ‘C bake for approximately 20 minutes or until it turn golden color.
Take the crust out from the oven and put some blueberry paste into the crust. Once it is done, pour the cheese mixture into a piping bag and start to pipe a small portion of cheese mixture on top of the blueberry paste. To decorate the tart, use another piping bag for the blueberry paste and start to pipe for some pattern that you prefer.
Place the tart into the oven again and bake for another 15 to 20 minutes or until the cheese mixture becomes flat on the surface. Bring the tarts out from the oven to let it cool completely. Served.

Note: Don’t make the crust too thin because it will be soft and won’t be able to hold the cheese. And if you make it too thick, you feel like eating the crust and not the blueberry cheese.

Caramel Banana Upside Down Bread



Ingredients

½ cup packed brown sugar
3 tablespoons unsalted butter, cut into several pieces
About 2 bananas, sliced in rounds
½ cup chopped walnuts or pecans (optional)
1½ cup whole wheat flour
¾ cup white granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground cinnamon
1 cup mashed overripe bananas
2 large eggs
⅓ cup coconut oil or vegetables oil
⅓ cup buttermilk
1 teaspoon pure vanilla extract

For the Caramel Glaze:
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons heavy cream

Instructions

Preheat the oven to 325 degrees F. Grease a 9X5 inch loaf pan.
Spread the brown sugar on the bottom of the loaf pan. If using nuts, sprinkle them evenly over the sugar. Dot with the butter. Put it in the oven for about 8 minutes. Stir the mixture until dissolved and spread evenly on the bottom of the pan. Place a single layer of the banana slices on top of the sugar mixture along the entire bottom of the pan.
Combine all dry ingredients in a large bowl. Add all the remaining wet ingredients and beat just until combined. Do not over-beat.
Pour the batter over the sliced bananas in the pan.
In an oven preheated to 325 degrees F, bake for 1 hour or until a toothpick inserted into the middle of the loaf comes out clean but moist.
Allow the cake to cool in the pan for 20 minutes before inverting it on a cake platter.
To prepare the Caramel Glaze, place the butter, brown sugar and heavy cream in a small saucepan (you can also microwave the ingredients for a minute). Bring to a boil and simmer for 2 minutes. Remove from heat and let it sit for a minute. Pour the glaze evenly over the cake (on the upside down side with the bananas on top).

Puding Roti Caramel



Bahan-bahan

3 sudu besar gula untuk dijadikan gula hangus
3 atau 4 keping roti gardenia
3 biji telur A @ 4 biji gred B - pukul dan di tapis
1 cawan air suam
1 cawan susu cair
3/4 cawan susu pekat
1 sudu kecil esen vanilla

Cara-cara

Cara membuat gula hangus , masukkan gula ke dalam kuali, masak hingga gula jadi perang . Masak dengan api kecil .

Kemudian masukkan 1 sudu besar air panas, hati-hati kerana gula mudah meruap. kacau hingga sebati dan matikan api. Tuang terus dalam loyang.

Ketepikan.Panaskan pengukus. Carik2kan roti kemudian blender bersama air suam dan susu. Selepas itu masukkan telur yang sudah ditapis itu dan masukkan esen vanilla. Blend sekejap agar sebati. Tuang adunan tadi kedalam loyang gula hangus dan kukus sehingga masak. (40min-1jam)

Sejukkan dahulu barulah di potong dan hidangkan.

Crab And Egg Breakfast Cups



Ingredients :

8 slices whole wheat bread
4 tsp butter for greasing the cups & bread

For The Filling

4 eggs
3/4 cup boiled sweet corn
1/4 cup crab meat
1 tsp oil
1/4 grated cheddar cheese
1/4 cup finely chopped onions
1/4 cup spring onions (optional)
1/4 cup finely chopped red and green capsicum
salt and pepper to taste

Method

Grease the cups & bread slices with butter.Separate all ingredients into 4 portions.
Place the 2 bread slices into the cup , fill gently a portion of the filling in each cups, break one egg and sprinkle with salt and pepper.
Bake in a preheated oven at 200°c (400°f) for 5 to 8 minutes or till the bread is crisp and the egg is nicely cooked. Sprinkle thinly sliced spring onion. Serve immediately.

COTTAGE PIE



The combination of minced beef and cheesy crispy potatoes will always be a family favourite.

Ingredients.

1/3 cup olive oil
3 onions, finely chopped
2 garlic cloves, crushed
2 tablespoons Tomato Paste
1kg lean beef mince
1 tablespoon sugar
1 tablespoon Stock (secukup rasa)
1 cup water
1 diced tomatoes
1 cup mixed Vegetables
Salt & pepper to taste
1 tsp paprika
1 tsp dried parsley
700g potatoes, thinly sliced
125g cheese, finely grated

Directions:

Heat 2 tablespoons of oil in a saucepan over medium heat. Cook onion and garlic, stirring, for 8 minutes or until soft. Add tomato paste. Cook for 3 minutes.
Increase heat to high. Add mince beef. Cook, stirring, for 8 minutes or until browned. Add stock, water and tomatoes. Bring to the boil. Reduce heat to medium-low. Simmer, partially covered, for 10 minutes. Add mixed vegetables.

Preheat oven to 200°C. Grease ovenproof dish. Spoon in mince.Combine potatoes, 1 1/2 tablespoons oil, and salt and pepper. Arrange one-third potatoes over mince. Sprinkle with half the cheese. Repeat layers, finishing with potatoes. Drizzle with remaining oil. Season with salt and pepper. Sprinkle paprika and parsley. Cover with foil. Bake for 20 minutes. Increase heat to 230°C. Remove foil. Bake for a further 20 minutes or until golden. Ready to serve.

Cup Kek Pisang Kukus


Bahan-bahan

1 cawan gula
1 cawan minyak olive oil
2 cawan tepung gandum
2 sudu teh soda bikabonat
2 biji telur
1 sudu teh cinnamon atau esen vanilla
4 biji pisang berangan or 11 biji pisang emas
chocolate
kacang

Cara-caranya

Masukkan semua bahan ke dalam blender kecuali chocolate dan kacang.Gaul kan supaya rata. Masukkan dalam paper cup.
Kukus selama 10-15 minit. Siap untuk di hidangkan bersama chocolate dan kacang atau makan begitu saja.

BROILED SALMON WITH CURRY YOGURT SAUCE


INGREDIENTS

4 salmon steaks
Salt and pepper
2 tbsp. olive oil
1 1/2 tablespoons minced fresh ginger
1/2 teaspoon freshly ground black pepper
1 teaspoon paprika
Freshly squeezed lemon juice
2 tbsp bread crumbs (optional)
1 cup low fat plain yogurt
1 spring onion.(optional)
1 tbsp. honey
1 tbsp. curry powder

DIRECTIONS

Heat broiler. Line a rimmed baking sheet with nonstick foil. Place the salmon on the prepared sheet, drizzle with oil and marinade with each salt, pepper, ginger, paprika, lemon juice and sprinkle with bread crumbs, Broil until cook throughout, 15 to 20 minutes.
Meanwhile, in a small bowl, whisk together the yogurt, spring onion, honey and curry powder. Served with steamed brocolli , lemon and the salmon.

Breakfast Egg Muffins with Chicken, Mushrooms and Spinach.


INGREDIENTS

8 whole eggs
1 or 2 cups spinach - chopped
1/2 cup red pepper - chopped
1/2 cup green pepper - chopped
1/2 cup onion- chopped
1/2 cup cheese - chopped
1 cup mushrooms- chopped
2 cups chicken (steamed) - chopped
2 cloves garlic, minced
1 tsp paprika
1 tsp bicarbonate soda
1 tablespoon olive oil
Salt and pepper to taste

INSTRUCTIONS

Start by chopping some veggies: red pepper, green pepper, onion, cheese, chicken, mushrooms, and spinach! I like chopping everything pretty small (cube) , but the size of veggie is up to you! Mince some garlic and crack all eggs! Whisk the eggs together with all ingredients in a large measuring cup and set aside.Stir to combine. I like whisking the eggs in the measuring cup, because it makes pouring the mixture into the muffin tin easier later on!
Now, heat a non stick muffin pan over medium heat. Once hot, add in olive oil.

Preheat the oven to 180 degrees C and grease a muffin pan with oil. Pour the egg/veggie mixture evenly into the muffin pan.

Bake for about 15-20 minutes, or until the tops are firm to the touch or if an inserted toothpick comes out clean.
Let cool in the pan for a few minutes, before removing! Serve immediately or let finish cooling on a cooling rack. Arranged on a plate and served with sweet Red Chili Sauce.

French Toast with Caramelized Bananas and Toasted Almonds





French Toast

Ingredients

Batter makes enough for about 8-10 slices of toast
4 eggs
2/3 cup milk
1 tsp cinnamon
1 tsp vanilla extract
1/4 tsp almond extract
8 slices of bread – any bread will do
2 bananas, sliced
1/4 cup sliced almonds
1 teaspoon salt
Butter for pan
Syrup of your choice – I chose pancake syrup/honey

Directions:

Heat your oven to 200F.

Whisk the eggs, milk, salt, cinnamon and extracts together and soak the bread on one side for 5 minutes, then flip and let it soak for another 5 minutes, pressing down to soak up more batter.

Heat a large non-stick skillet or griddle over medium heat and add butter. When butter starts to bubble, add the slices of bread (work in batches) and cook till golden brown on each side, about 5 minutes per side. As they finish, put them on a baking sheet and place in the oven to keep warm while you finish the rest.

When you’re done with the toast, wipe the skillet out with a few paper towels and over medium high heat, toast the almonds until brown and fragrant. Remove and add one tablespoon of butter, a swirl of syrup and the bananas and cook until golden on each side, about 1-2 minutes per side. Top the toast with almonds and bananas and syrup and serve!
