Raisin Scones


These scones are best enjoyed hot from the oven with some fresh cream & jam . My kids love it !Ingredients

260 gm (2 cups) all purpose flour

2 tsp baking powder

75 gm (1/3 cup)butter
50 gm (1/4 cup) castor sugar
A pinch of salt

50 gm (1/4 cup) raisin
120 ml (1/2 cup )fresh milk
1 egg , lightly beaten
1 tsp vanilla essence

Glaze - 1 egg or cream

Preheat oven to 375 degrees C and place the rack in the middle of the oven.


In the large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into the mixture with a pastry blender or two knives. The mixture should look like coarse crumbs. In the small bowl, combine the milk, beaten egg and vanilla. Add this mixture to flour mixture. Stir just until combined. Do not over mix.
Knead dough gently four or five times and using cookie cutter, cut the dough into rounds. Place the rounds on the prepared cookie sheet. Brush the tops of the scones with a little cream or eggs. This helps to brown the tops of the scones during baking.
Bake for about 15 minutes or until nicely browned. Removes from oven and transfer to wire rack to cool. Serve with whipped cream and your favourite jam.

Blueberry And Strawberry Waffles





Ingredients

- 2 cups of all purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon salt
- 2 teaspoons of sugar
- 2 cups of milk
- 2 eggs
- 1 tablespoon full of melted butter
- pancake syrup
- Blueberry and strawberry jam
- Ice cream (optional)

1. Separate the egg whites from the yolk and beat them until stiff or they turn into white snow.

2. Mix all the milk, melted butter, sugar, and egg yolks into smaller bowl. Mix until the sugar dissolves. Put all the dry ingredients (all purpose flour, baking powder, salt) into a bigger bowl and pour in the wet stuff. Mix until most of the batter is nice and even but leave some lumps that will tell you that you did not mix too much.

3. Gently mix egg whites into the batter.

4. You are finished, all you need to do is to bake your waffles. Just put one cup of batter in the preheated iron waffle and close it. It should take about 2 minutes, but check you waffle maker for specific instructions. Pour pancake syrup, blueberry and strawberry jam, butter on top of the waffles and ready to serve.
Makes about 8 waffles.

Ikan Cencaru Sambal Belakang

Bahan-Bahan:

Ikan cencaru sederhana besar dibelah belakang
minyak untuk menggoreng
belacan
cili merah
2 biji bawang
garam
gula
kunyit

limau kasturi


Cara:
Lumur ikan cencaru dengan serbuk kunyit dan garam. Ketepikan. Sediakan sambal belacan dengan mencampurkan cili merah,bawang, belacan, garam, gula dan perahan limau kasturi. Masukkan sedikit sambal belacan kedalam ikan.
Panaskan minyak dan goreng ikan sehingga garing. Angkat dan letakkan didalam pinggan.

Kari Udang Kacang Buncis


Bahan-bahan ( 4 orang )

  • 5 sudu besar minyak masak
  • 500 ml santan
  • 15 ekor udang harimau bersihkan udang tanpa membuang kulitnya
  • 2 sudu teh garam
  • 4 sudu besar rempah kari udang Adabi
  • 3 biji bawang besar (dihiris)
  • 3 ulas bawang putih
  • 2 helai daun kari
    garam secukup rasa
  • 1/2 kg kacang buncis (dipotong serong)

Cara-cara

  1. Panaskan minyak masak didalam periuk. Masukkan bawang besar , bawang putih , daun kari dan tumis sampai sedikit kegaringan dan masukkan rempah kari udang dan tumis lagi hingga ia terbit bau dan terbit minyak.
  2. Masukkan santan. Biar ia mendidih perlahan-lahan di atas api sederhana, selama 5minit.
  3. Masukkan udang , kacang buncis dan juga garam. Kacau hingga semua bahan masak.

Pancakes


Here is the basic pancakes mix

2 tablespoons melted butter
1 cup flour
2 teaspoons baking powder
2 tablespoon sugar
1 beaten egg
2 cups milk
1/2 teaspoon salt
Honey

Sift together flour, baking powder and salt. In the separate bowl, combine egg, sugar and milk.
Add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot greased
griddle, using about 1/4 cup of batter for each pancake. Cook until brown on one side and around edge. Turn and brown the other side. Put on the plate and pour honey.
Ready to serve.

Chocolate Chip Cookies







Ingredients

1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp vanilla essence
3 cups all purpose flour
1 tsp baking soda
2 tsp hot water
1/2 tsp salt
2 cups semisweet chocolate chips
1 cup chopped walnuts/hazels






Preheat oven to 175 degrees C.
Cream together the butter, white sugar, brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips and nuts. Drop by small spoonfull onto ungreased pans. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Shepherd's Pie

Ingredients

For the meat filling

1/4 cup of olive oil

1 medium onions diced

5 garlic cloves minced

500g minced meat

1 dried bay leaves

1 cup mix vege

1 egg

1 sliced of bread (or crumbs)

1/4 cup milk

1 teaspoon of salt

1/4 teaspoon of fresh ground black pepper

2 tbs of chicken stock granules


For the potato topping

1 kg potatoes

1/2 cup of milk

125g softened butter

1 teaspoon salt

1/4 teaspoon white pepper

Fill a pot with cold water, add a teaspoon of salt.Wash, peel and cut the potatoes into cubes, about one inch.Put the potato cubes into the pot of water and bring to boil, uncoveed for about 15 minutes. While potatoes are cooking, heat a pan up. Add olive oil and cook for diced onions for 15 mins until slightly translucent.

Add the garlic and stir for another 30 seconds. Add the minced beef, bay leaf, chicken granules. Mash bread and egg with milk. Stir in bread mixture and cook until the liquid is reduced by half for about 5 minutes. Add mix vege, salt and pepper.

Cover the pan and simmer at low heat for 15 mins.

Heat the oven to 180degC.

Drain the potatoes. Add the rest of the potato topping and mash together. For a lighter potato mash, add more milk.

Scoop the meat filling into an oven dish.Spread the potato topping on. Bake for 15-20 mins until the top of the potatoes are golden.

Ready to serve.
