Raisin Scones
These scones are best enjoyed hot from the oven with some fresh cream & jam . My kids love it !Ingredients
260 gm (2 cups) all purpose flour
2 tsp baking powder
75 gm (1/3 cup)butter
50 gm (1/4 cup) castor sugar
A pinch of salt
50 gm (1/4 cup) raisin
120 ml (1/2 cup )fresh milk
1 egg , lightly beaten
1 tsp vanilla essence
Glaze - 1 egg or cream
Preheat oven to 375 degrees C and place the rack in the middle of the oven.
In the large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into the mixture with a pastry blender or two knives. The mixture should look like coarse crumbs. In the small bowl, combine the milk, beaten egg and vanilla. Add this mixture to flour mixture. Stir just until combined. Do not over mix.
Knead dough gently four or five times and using cookie cutter, cut the dough into rounds. Place the rounds on the prepared cookie sheet. Brush the tops of the scones with a little cream or eggs. This helps to brown the tops of the scones during baking.
Bake for about 15 minutes or until nicely browned. Removes from oven and transfer to wire rack to cool. Serve with whipped cream and your favourite jam.
